Andrea’s Apple & Almond Tart

My friend Andrea, who admittedly is a professional cook made this glorious Apple and Almond tart…and oh my goodness; it was a taste from the heavens.

It had a light pastry base which not only showed off the look of the appeals but allowed their taste to shine through.

There was much begging from me to share her recipe… and now you have it. Enjoy

Instructions:

50g Butter

50g Sugar

125g Ground Almonds

1 med Egg

3 drops of Almond Essence

3 Granny Smith Apples, Peeled cored & sliced thinly

Packet of puff pastry (all butter)

75g Butter melted

 

2 Tablespoons Caster sugar to sprinkle

1. Preheat oven 200 C /400F or Gas 6

2. Beat 50g Sugar & 50g Butter together

3. Mix in Egg

4. Mix in ground Almonds & Almond Essence

5. Roll out puff pastry to approx. 30cm round and approx. 5mm thick or you can make individual tarts cut pastry into 9cm rounds and place on greased baking tray.

6. Spread out the Almond paste on the pastry and leave pastry edge clear of paste by approx. 1.5 cms

7. Layer the Apple over the Almond paste

8. Brush with the melted Butter

9. Sprinkle with C.Sugar

Bake for 25 – 30 mins

Remove from oven and dust with Icing Sugar

Option: Serve with Vanilla Ice Cream
