Cooking up trouble

I have just made 4 Banoffee pies for our crew lunch tomorrow…..

2 things to remember when making this delicious pie – don’t pick up by mistake evaporated milk like I did instead of condensed as it will never boil down to toffee! There is a higher amount of added sugar to condensed and it is this that makes it turn to toffee when boiled. Also don’t believe recipes that happily say, “put your can of evaporated milk in a pan of boiling water and leave to caramelise for 2 hours”. You actually need to check the water level every 15 mins and top up with boiling water otherwise it will boil dry and burn your pan and the tin of condensed milk inside (I had a near miss!).
