Tasty Root Vegetables

My favourite and quickest way to serve vegetables with roast chicken (You can use veggie soya or Quorn chunks if you are a non meat eater). Peel chop and throw in roasting pans a selection of root vegetables with cloves of garlic, chopped herbs of your choice and red onions for colour. Drizzle over olive oil, salt and pepper and place in the oven at 190C for aprox 45 mins. Lovely!
